Weekly Wrap-up: February 10, 2017--Vol #1
This week's theme seemed to be "it's okay to suck at something...but still give it a go!" After all...how are we supposed to get better at something without ever practicing?! The things I gave a go to this week were:

What you missed on the blog:
Let's just say I might have started this one talking about how I struggle with meditation...but ended up accidentally needing to mention vibrators. What?! It happens! What I'm Reading (& Loving!):
It's been awhile since I picked up a book about self improvement. But when I visited Sedona & ended up in a metaphysical book store, I couldn't help but peruse a book by Deepak Chopra about reinventing our bodies (while simultaneously resurrecting our sometimes very neglected souls). After all...at 31 weeks pregnant, I'm gonna have some serious reinventing to do soon...so I thought I'd get a head start with this book! Click here to check it out for yourself. I will be starting a virtual book club in the next few weeks to chat about the insights & super truths I & others are picking up as we read! What Inspired Me When I Needed It Most:
I'm currently enrolled in a course called "Training Your Inner Warrior" by one of the most incredible teachers I know, Robin Rice (she is SO worth knowing!). One of lessons this week included a fantastic motivational video.
In the search to find the video on YouTube to share with you here (no luck...so you're stuck with the Facebook version above, apologies if you're not on FB), I rediscovered one of my all time favorite speeches. A commencement speech by Jim Carey that makes me cry every time! Every. Single. Time. And also laugh. And be inspired.

The DELICIOUS Food Prep I'll Be Doing Again Next Week:
Chicken burrito bowls. Holy guacamole were these good! Made enough for 6 servings (3 for me & 3 for my hubby) and we both agreed we want to do it again next week! I'll leave the recipe here for convenience sake (bold, italicized comments in parenthesis are my additions & changes)...but it's worth clicking here to see the gorgeous pictures & video. Especially because there are 16 other mouthwatering ideas to try! Yummy to the max!
CHICKEN BURRITO BOWL (serves 4-6)
INGREDIENTS
PREPARATION
- To send my first weekly wrap-up to all of you lovely people (this is it, right here! Thoughts & ideas welcome as I learn how the heck to do this!)
- To write for at least 15 minutes 3x this week (because if I can get into the groove in 15 minutes...I'll probably keep going!)
- To return to my healthy roots with some killer food prep & at least 3 trips to the gym or walks in the park

CHICKEN BURRITO BOWL (serves 4-6)
INGREDIENTS
- 2–3 boneless skinless chicken breasts
- 3 bell peppers, any color, sliced
- 1 large red onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon taco seasoning
- Salt and pepper
- 1 jar salsa (we used hatch green chilis for a bit more kick!)
- 3 cups cooked brown rice, divided (we cooked it with veggie broth for extra flavor)
- 1 can black beans, drained and rinsed
- 1 can corn
- 1 cup shredded cheddar cheese
- 1 lime, sliced into wedges
- Fresh cilantro to garnish
PREPARATION
- 1. Preheat oven to 400˚F/200˚C.
- 2. Line a baking sheet with foil.
- 3. Place the chicken, peppers, and onions on the baking sheet and drizzle with oil.
- 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts (we were out of taco seasoning, so used a spicy ranch seasoning packet instead...delish!).
- 5. Salt and pepper the peppers and onions, tossing to coat.
- 6. Top each chicken breast with a generous pour of salsa.
- 7. Bake in a preheated oven for 25 minutes (or 30 for thicker breasts).
- 8. Rest chicken for 10 minutes, before slicing into strips.
- 9. Add a base of brown rice (1/2c is about 1 serving...and made for a good mix when we ate the bowls!) to 4-6 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
- 10. Store in the refrigerator and enjoy any extras immediately. Can be kept refrigerated for up to 4 days.
- 11. Meal-prep FTW! Enjoy!
